i've been playing GTL for a long time now, and recently got a G25 wheel.

I then switch the automatic clutch option OFF in GTL, but it doesn't seem to be completely manual:

The car will stall if i don't use the clutch and stop with a gear on, but i don't have any issue changing gears without using the clutch (changing up or down).

Is there an option if forgot to uncheck or does it only work like that ?

it does only work like that.
with auto clutch its easier to shift at lower gears and lower rpm with full throttle.

I, too, have the G25 and that also happens to me but i have found a way to use it.
Alway start the car in neutral. It seem that the car will not start when in gear and clutch press in.
Always keep the rev up and depress the clutch. Car stalls if you try to take off in idle.
If you go off the track. press brake and clutch. car stalls real quick if you just use the brake. Even if you press in the clutch just before you stop, it still stalls out.
